Ingredients

  • ¼ watermelon, large diced
  • ½ cup jicama, medium diced
  • ½ cup cucumber, sliced into rounds
  • 4 radishes, thinly sliced
  • ½ large jalapeño, sliced into rings
  • ½ cup feta, crumbled
  • 1 lime, zested
  • Extra virgin olive oil
  • Cilantro leaves, for garnish
  • Maldon Sea Salt, for garnish

Ingredients

Directions:

  1. In medium bowl, combine watermelon, jicama, cucumber, radishes and jalapeño. Crumble feta over top.
  2. Top with lime zest and drizzle of olive oil. Garnish with cilantro leaves and sea salt.

  • 1 bay leaf
  • 2 sprigs thyme

  • 1 lb. Private Selection™ Red Bliss Potatoes
  • 1 cup garlic, peeled
  • 1 green bell pepper, large sliced
  • 1 red bell pepper, large sliced

  • 2 small red onions, quartered
  • 14 oz. Private Selection™ Smoked Sausage, Sliced
  • 1 bay leaf
  • 2 sprigs thyme
  • 1 Tbsp. paprika
  • 1 Tbsp. cayenne
  • Salt, to taste
  • Ground pepper, to taste

Directions:

  1. Preheat grill or oven to 375°F.
  2. In medium pot filled with salted water, bring potatoes to boil. Drain. Cut potatoes in half.
  3. In large bowl, toss together potatoes and remaining ingredients. Double wrap in foil to create pouch.
  4. Cook approximately 30 minutes, turning foil pouch from time to time.

  • ½ Tbsp. smoked paprika
  • ½ tsp. cayenne pepper
  • 1 Tbsp. black pepper
  • 1 Tbsp. salt
  • ½ lime, juiced
  • Maldon Sea Salt, for garnish

  2. Grill (or bake) to an internal temperature of 165°F, 25-35 minutes.
  3. To serve, top with sea salt and lime juice.
